Make Your Own Healthy Indian Rice Pudding in a Few Simple Steps

Kheer is an Indian style rice pudding that is simple, sweet and delicious. It is one of my favorite desserts, and it’s also something I love to eat for breakfast. And it really only takes about 5 minutes to make!
Traditionally Kheer is made with cow’s milk, but we are going to use coconut milk. So this kheer is suitable for vegans, and doesn’t have any of the undesirable impurities most available sources of dairy have. My recipe also includes brown Basmati rice, instead of the usual white Basmati rice, so it is a wonderful source of fiber, B vitamins and energy!!
No sugar blues after this sweet moment!
The other wonderful thing about this recipe is that I always use rice I have leftover from dinners during the week. Cook once, eat twice! I think it is always a great idea to cook enough rice to use throughout the week for whatever you please, or at least enough for another meal, and this is the perfect way to use some of it up!

Ingredients:

- 3 Cups cooked brown Basmati rice*
- 1/3 Cup (up to ½ cup as desired) coconut sugar. (This is a low glycemic sweetener made from the flowers of the coconut tree and can be used just like sugar in any recipe).
- 2 Teaspoons crushed cardamom seeds. (I use a mortar and pestle to crush them. It’s okay if they are still course, but crushing releases the aroma and flavor of the seeds).
- 1 Teaspoon pure vanilla extract.
- 3 Cups coconut milk. (If you want your pudding a little less thick, feel free to use just one 16oz can of coconut milk and one cup of water).
- ¼ Cup chopped or slivered almonds.
- ¼ Cup raisins (optional).
- A pinch of salt and a few strands of saffron if you have it!

Directions:

Add all the ingredients to a pot, and turn on the stove to medium heat.
Stir well and allow everything to soak in the warmth, and blend together.
Once it is warm or hot, and the flavors have soaked in, your kheer is done! This usually takes between 5 and 8 minutes. Give it a taste, and once it’s perfect, turn off the heat.
You can eat it warm or cold, to your liking. It is really quite divine!

Pomegranate Found To Prevent Coronary Artery Disease Progression

A new study done by journal Atherosclerosis confirms that pomegranate extract may prevent and reverse the primary pathology associated with cardiac mortality (progressive thickening of the coronary arteries caused by the accumulation of fatty materials known as atherosclerosis.



Mice with a genetic susceptibility towards spontaneous coronary artery blockages were given pomegranate extract via their drinking water for two weeks, beginning at three weeks of age. Despite the fact that pomegranate treatment actually increased cholesterol levels associated with very low density lipoprotein-sized particles, the treatment both reduced the size of the atherosclerotic plaques in the aortic sinus and reduced the proportion of coronary arteries with occlusive atherosclerotic plaques.

Remarkably, the researchers also found that pomegranate extract treatment resulted in the following beneficial effects:

a) Reduced levels of oxidative stress
b) Reduced cardiac enlargement
c) Reduced monocytie chemotactic protein-1, a chemical messenger (chemokine) associated with inflammatory processes within the arteries.  
d) Reduced lipid accumulation in the heart muscle
e) Reduced levels of monocyte chemotactic protein-1 and fibrosis in the myocardium
f) Reduced macrophage infiltration in the heart muscle
g) Reduced ECG abnormalities


How can something as benign and commonplace as a fruit extract reverse so many aspects of coronary artery disease, simultaneously, as evidenced by the study above?  The answer may lie in the fact that our ancestors co-evolved with certain foods (fruits in particular) for so long that a lack of adequate quantities of these foods may directly result in deteriorating organ function.  Indeed, two-time Nobel Prize winner Linus Pauling argued that vitamin C deficiency is a fundamental cause of cardiovascular disease, owing to the fact that our hominid primate ancestors once had year-round access to fruits, and as a result lost the ability to synthesize it.

Discussion
This study adds to the already extant body of clinical research indicating that pomegranate can help unclog your arteries. For instance, back in 2004, the journal Clinical Nutrition published the results of a three year clinical trial in an Israeli population, finding that the daily consumption of pomegranate juice reversed carotid artery stenosis by up to 29% within 1 year.  Remarkably, the blockages in the control group increased 9%, indicating that pomegranate's artery unblocking effects were even greater than at first apparent.

Guarana: 

Plant that contains large amounts of caffeine. Manufactures are not mandated to include this information on their labels, therefore, each serving size may contain significantly higher, dangerous amounts of caffeine than listed.


Caffeine: 
central nervous system (CNS) stimulant; Its adverse effects are nervousness, anxiety, insomnia, tachycardia, palpitations, altered consciousness, paralysis, hallucinations, seizures, etc. Energy drinks contain three times the amount of caffeine than cola drinks, and energy "shots" can contain up to five times the amount.

Taurine: 

Amino acid found in the CNS. Originally found in the bile of bulls and is now synthetically mass produced, even though it is produced naturally in the body. Possible adverse effects are hypertension, seizures, stroke, and death (Group III, 2009).
L-Carnitine: 
Amino acid; adverse effects are nausea/vomiting, seizures, abdominal pain, etc.

Sugar: 
Toxic to our bodies and produces effects/addictive behaviors similar to alcohol. Fructose is extremely similar to only one other substance, alcohol (Lustig, 2009).

Energy drinks and shots also contain artificial flavoring and preservatives, which are toxic to our bodies and unnatural.


Ginseng:

Things start to go wrong when we take Omega-6 fats. As per studies, intake of Omega-6 in the bloodstream directly correlates with the risk of cardiovascular disease and many other diseases, including cancer, fatty liver disease, depression and altered immune function. So in order to stay healthy start avoiding these oils and consume more of coconut and olive oils which are healthy.
