ORANGE DREAMSICLE ICEBOX CAKE


INGREDIENTS :

FOR THE CRUST:

1 1/2 C Grain Free Cake/Cookie Crumbs (I always keep some of my homemade ones frozen!)

3 T Melted Butter or Coconut Oil

Toast the Crumbs in the oven for a few minutes and turn to crumbs in your Food Processor. Add the Butter or Oil and press into 7" Spring Form Pan.


FOR THE FILLING:

1 1/2 C Heavy Cream or Coconut Milk
1/2 C Shredded Coconut
1/2 C Cooked Yellow Sweet Potato
2 Medium-sized Oranges (with skin) de-seeded & chopped (about 1 1/2 - 2 C)
1/3 C Erythritol
1/8 t Stevia
1 T Vanilla Extract or Paste
1 t Almond Extract
2 Raw Eggs or 1 Medium Peeled Zucchini and 1/4 C Water
1/4 t Guar Gum

Puree in your Blender until very smooth and pour over the Crust. Put in the freezer while you make the Orange Curd.


ORANGE CURD:

1 Large (or 2 Small) Oranges, de-seeded and chopped

1/4 C Erythritol
1/4 C Honey or 1/8 t Stevia

1 T Butter or Coconut Oil

Blend in a small Food Processor until creamy. Spread over the top of the 'Cake' and return to the freezer. Freeze several hours or overnight. Let set at room temperature for 30 minutes or defrost for a few hours in the refrigerator before serving.
